fly
Froze my skinned whole bear from last June. Took it to the butcher, he thawed it and cut it into roasts and ground some. I re-froze it and later thawed and ate it over several months time. The taste was great and I'm still alive.
GWSmith
Thaw under running COLD water enough to get the ice off then bag immediately and vacuam seal. What deterioration people experience in the meats they thaw and refreeze safely is in texture. The meat swells as it is thawed allowing water to permeate. When it is refrozen that water expands tearing apart fibers that would normally keep the meat firm.
