Interesting Fact, The paddle fish is a highly prized source of blackmarket Caviar. In Oklahoma they are very closely regulated as our spring Spoonbill (Aka Paddlefish) fishing season use to draw a lot of blackmarket marketing for illegal caviar. Oklahoma State Record Yeah, when I said catfish, I really meant the spoonbill catfish (paddlefish) but I kinda doubted half the folks on here would know what one was. Never ate roe from blue cat or channels. We used to catch some massive paddlefish when I was a kid. Nice to cut up fish that have no bones too!
