Wash them really good, roll them in cornmeal or flower, or the same batter youre using for fillets. Fry them just like the fillet. When the batter (or covering) is done dig in. I think Bluegill, sunfish, etc. are probably my favorite because the sacks are smaller so you dont get a massive mouthful of eggs at one time. For our meal I either use flower with salt/ pepper and a little cajun mix or I will use corn meal with salt/ pepper and or cajun. Quote Link to comment Share on other sites More sharing options...
Jeramie Posted February 2, 2011 Report Share Posted February 2, 2011 Yeah, when I said catfish, I really meant the spoonbill catfish (paddlefish) but I kinda doubted half the folks on here would know what one was. Never ate roe from blue cat or channels. We used to catch some massive paddlefish when I was a kid. Nice to cut up fish that have no bones too! Ive never eaten catfish eggs either. And yes, its nice to cutup a fish without any bones. For those that dont know what we are talking about..... paddle fish have no bones. They have one line of cartilage that runs down their backs and thats it. One of the best spoonbill (paddle fish) locations in the USA is literally about 5 miles from my house. Incredible fishing!
