Why I Love Louisiana..... *(PIC)*

I have to travel for work quite a bit. Most trips are pretty short (2-3 days). I do get to see some of the local flair on most trips.

I had to go to Sulphur Louisiana for business last week for a couple of days. I had a lot of work to do but I do typically find the time to get out and take a look around, find something good to eat, etc. Its pretty much the highlight of the trip for me. Cajun food is one of my favorites and seafood hovers around the number one spot quite often.

I had a GREAT meal on Wednesday, worth of a picture and mention. Granted its not actually seafood but man.... it was good..... :D This is often the highlight of my trip to Louisiana... :p ......and yes, I did suck the heads. :D

That was 5lbs. It ended up being a LOT of food by itself but we also ordered other stuff for the table like stuffed shrimp, stuffed crab, fried shrimp, oysters, etc. It was a FEAST.

BTW, sucking the heads is really suppose to get the "mustard" (entrails and other cooked goods). However, 99% of the time you're actually just getting juice and spice it was cooked in. It is Delicious.

In complete irony, last night my Golden Retriever was barking. She rarely barks so I went out to see what the problem was. She was walking in circles with her nose being the pivot point.

I went out to see what she had and it was a mud bug... :D Its claws were raised high standing its ground. I politely took it to the edge of the fence and released it into the wild. I did mention that I had just eaten its cousins so it would be better to move along. :p

Do you not have them in the creeks in your neck of the woods? We grew up catching them and boiling them! I still like to turn over rocks in the creeks on occasion...

Yeah as kids we caught them in the creeks.....Hard to find many in creeks or ponds these days. Seems the blue heron has really put a hurt on them.

When we caught them we always used them as bait for catfish.

Never ate them.....

I'd take a vat of boiled mud bugs, taters and corn over a T-bone steak any day of the week. Absolutely love them things, and with a father-in-law who is full blown coony and only being 45 minutes from Louisiana, they are easy to come by.

The spicier the better!!
