Snipe Posted March 10, 2011 Report Share Posted March 10, 2011 I make a herb & garlic leg of lamb with a rosemary sauce.. 3 cloves of garlic, crushed 2 tsp of dry oregano 2 tsp of dry thyme 2 tsp of dry rosemary 1/4 tsp of fresh ground black pepper Mix all ingredients and rub leg down good.. Wrap in saran wrap and place in frig over night.. Next day place leg in pan and pre heat oven to 450*.. Place leg in oven and let brown for 20-30 minutes.. Drop temp in oven to 350* and cook to internal temp 135* for medium rare and 145* for medium.. I prefer medium rare.. Let set covered for 15 minutes before slicing.. Slice and serve.. I like leaving the rosemary sauce on a gravy boat on the table.. Rosemary Sauce.. 2 c. beef stock 1 tbsp. tomato paste 3/4 c. salad oil 1 tbsp. fresh chopped rosemary 1 lb. sliced mushrooms 1 oz. shallots 2 tbsp. balsamic vinegar Salt and pepper to taste Add all ingredients and simmer for 30 minutes covered... LETMGROW Posted March 13, 2011 Report Share Posted March 13, 2011 Reminds me... of a story I heard once: Seems this guy was traveling down a country road and he saw this sheep standing next to a fence. The sheep had two wooden legs. After traveling a couple miles further, the guy was overcome with curiousity. He turned around and drove to the farm house where the sheep stood outside. The guy found the farmer and asked him, "why does that sheep have 2 wooden legs?" The farmer replied: " that there is the smartest sheep in the world." The guy said OK, "but why the wooden legs?" Well, the farmer said, " one day the hired hand was hooking up the wagon and when the wagon started to roll ahead that sheep butted him out of the way saving his life." Thats great said the guy," but, why the wooden legs?" The farmer replied: " then one day MA was walking across the yard and she was already to step into the well. That there sheep butted her past the well and MA was OK. The guy asked again, " why the wooden legs?" The farmer replied, " if you had a sheep all that smart, would you eat him all at once?"
