I don't know if you have a Costco by you. But...if you do. Go there and get some Mr.Yoshidas gourmet sauce. It is in the teriyaki family and is out of this world. I marinate just about piece of meat I put on a grill in that stuff. My wife picks it up in 2 one qt containers. I make my jerky with it, marinate the venison ke bobs and you can even use it as a dipping sauce. Give it a shot. I highly reccomend this product.

I've heard that this is good stuff but they don't sell it around here.

Here is my recipe.

2 TBS oil

1/2 C light soy sauce

1/4 C firmly packed brown sugar

1 TBS crushed garlic clove (from a jar)

1 tsp ground ginger

1/4 tsp ground black pepper

Heat all of the ingredients until the brown sugar has melted but do not boil. Allow to cool then marinate your meat overnight. Pat dry with paper towels then dehydrate.

I'm guessing that would make enough for about 1 lb of Jerky?

I haven't made any jerky myself but I've marinated lots of meat. One thing that really really helps is if you have a vacuum packer with the jar assembly. Put the meat and marinade in the jar and pull a vacuum to it. This really helps the meat absorb the marinade. Just two hours in the fridge in Vacuum pack is essentially equal to marinading overnight in a ziploc bag. If you leave the vacuum packed one over night in the fridge the results will be amazing.

Since RangerClay didn't specify what kind of Oil I would suggest Peanut Oil. Peanut Oil tenderizes the meat naturally.
