LETMGROW
Anyone have a recipe for shrimp scampi? No doubt Ranger Clay has one but he will be competing in the local chili cookoff today. BTW, a belated good luck greeting to Joe. Hope he comes away a big winner today. Lynn

dbHunterNY
it's pretty easy... can't really tell you my recipe without pulling out my index cards. it's been awhile. i did the same thing you're doing and then kept changing it until i was happy. not sure if you've already tried it yet. i assume you'll use cloves of garlic. just remember to not let them simmer too long and turn bitter. then if you use a white wine add it in more toward the end of cooking. i'll try to remember to post mine tonight when i get home. dbHunterNY
well i went to look for it but couldn't find it. basically just take the following... - some extra virgin olive oil - butter (actually the tub stuff works well that doesn't have anything hydrogenated in it) - italian blend seasoning - lemon pepper - 4 cloves of garlic crushed - white cooking wine (add it toward the end of cooking) - flour (a little can be used to thicken the scampi sauce) - shrimp (uncooked and unpeeled 30ct - peel them completely and take off the tails before cooking) ...also you can dust the shrimp on top with a cajun rub. another option is add parmesan cheese over them. i've also finished cooking them by baking them while coated in ritz cracker crumbs. LETMGROW
We made it Sunday afternoon. I haven't tried it yet. The rescue Squad picked me up and took me to the hospital where I spent The rest of Sunday and yesterday there while they got my potassium up from 0. All meds are changed and we are good to go. The Golden Years, they say. See my post in the Lounge Thread " Super Bowl Snacks " Thanks Lynn Edited February 8, 2012 by LETMGROW

LETMGROW
I'm hoping so. I got up this AM and slammed both feet on the floor and opened my eyes. At least I wasn't looking at the cover of a pine box. LOL! I feel better than I have in quite a while. Gonna lay low a couple days and rest. Thanks, Lynn
