But when I grill a prime rib I use: About equal parts kosher salt & rosemary leaves............ probably 1/4 to 1/2 cup of each. About equal parts of oregano, basil and ground black pepper........... probably 2-3 Tsp of each. I'm bad at writing down what I do. I just put stuff together until it looks about right. redkneck Posted February 21, 2012 Report Share Posted February 21, 2012 I don't think you need a whole lot more than salt and pepper, but of course I would add more. More importantly is that you actually get a prime cut, most of the standing rib roasts you see in the market are choice, and it makes a big difference when cooking due to the marbling difference. Snipe Posted February 22, 2012 Report Share Posted February 22, 2012 This is a simple beef rub I use for prime rib.. 3 TBS CBP 2 TBS Sea Salt 1.5 TBS Garlic Powder 1.5 TBS Onion Powder 1.5 Tsp Rosemary 1 Tsp Thyme 1/2 Tsp Allspice Mix well and keep in a dry place.. stevebeilgard Posted February 25, 2012 Report Share Posted February 25, 2012 i don't do a rub. i put on ground pepper then about 1/2" of coarse salt wherever it will stick on the top and sides. put it in a preheated oven at 550 for 20 minutes, then turn down the heat to 350 for 20 minutes per pound of meat. scrape off all the salt and mmmmmm.
