Italian Sausage Dishes

I have a ton of italian sausage from a boar I killed this winter. It's the ground, bulk style and not in links. I've mostly been using it for pizza and spaghetti but am looking for other options. Anyone have any recipes or dishes using it? I fear that if I don't try something new, I'm going to get sick of the stuff.

stuffed mushrooms : cook the sasauge and the mushroom seperately , then stuff the meat in the mushrooms .

hamburgers :

stuffed pasta shells : get those big pasta shells cook them , cook the sasauge , stuff the meat into the shells when they both are finished cooking , put them in a oven safe baking pan and pour your favorite pasta sauce over the shells , then put provolone , mozzarella cheese over the pasta sauce , put the baking pan into the oven at a temp. of 375 degrees , bake until the cheese is melted .

meatballs :

stuffed peppers ( bell or banana peppers )

Italian Sausage Vegetable Soup

1/2 pound Italian pork sausage

1 cup sliced carrots

1 large potatoe -- diced

1 garlic clove

2 cans beef broth

15 ounces garbanzo or chick pea beans -- drained

14 ounces canned tomatoes -- undrained

1 1/2 cups water

1/2 teaspoon Italian seasoning

1 bay leaf

1 cup zucchini

parmesan cheese

Brown the sausage. Combine all but zucchini in the crockpot and cook on low for

7-9 hours. Add zucchini and cook an additional 30 minutes.

My wife makes a sausage bread that is out of this world.

Stir fry the sausage until cooked. Mix meat with mozzarella and ricotta cheese. Add parmesean to it if you like. A little bit of black pepper. Now take a pizza dough and roll it in about 6" wide strips, 12" long. Place meat and cheese mix into dough and stuff mix into dough making a tube like shape. It could be flat or what ever shape you like. As long as the mix is covered and dough encases all the stuffing. Crack a egg and beat it. Brush egg over dough and bake until you get a golden bread. Don't stuff the dough too heavily or it will blow out and become messy and hard to eat. This is one of our favorites here.
