redkneck Posted July 31, 2012 Author Report Share Posted July 31, 2012 Spinach quiche Ingredients: 1 lb bacon 1 bundle green onion chopped 3 cups half and half 1 package fresh mushrooms (canned should work fine) 8 eggs 2 cups shredded cheese 2 packages frozen spinach (i think they are 10 oz, but fresh would work better prob) Preheat oven to 375 Fry bacon, set aside and crumble Sautee mushrooms and onion in bacon grease, drain Whip eggs in a large bowl Add in all the other ingredients, including the thawed and drained spinach Bake at 375 for around 35 minutes, or until firm and lightly browned (like an omelette) May want to cut back to 1.5 packs of spinach and 2.5 cups half and half, and 3/4 lbs bacon.
