When you dunk a turkey that oil splatters everywhere so a deeper pot is better. Basically it's probably true with deep fryers as with everything else, "You get what you pay for." It' comes with a 30 qt turkey fry pot, basket for boiling, turkey hanger and a smaller aluminum fry pot for fish etc. Some pots are higher grade aluminum, etc but they don't really matter that much when you're frying stuff, they work just fine. There is a world of difference in the way they cook. The heavier grade, quality aluminum pot is easier to control the temp and get a more consistent fry.
