Welcome to the forums.

We usually have to skin ours here, and go ahead and quarter them too. On rare occasions it is cool enough we can let them hang in the late season. Have hung them with the skin still on though when it has been cool enough. If you are taking the deer to a processor would just leave the skin on, they will skin it.

Field dress it in the woods , dont cut the piss bag ,,,watch your field dressing video the night before,,,after field dressing ,I take it home and skin it and quarter it up ,then I take the select part of the meat and take off all the sinue,that is the filmy looking stuff on the meat and remove any deer fat ,,,then I mostly grind for burgers and some for jerkey ,,,,,the key is get all the sinue and fat off ,,,,,,,when I grind the meat I replace the deer fat with pork fat ,,,,,sometimes o add ground beef to it ,,,

It is easier to work on the deer after its been chilled a couple hours ,,,,but I do it right away

Last year I shot a doe around 6:30 and I was home and had deer steaks on the grill and eggs by 7:45 ,,,, it was a good day

unless you've got to wait leave the hide on and take it right there. field dress it in the woods sure but the hide on to protect the meat. the exception being if you have to wait a while and it's warm out. the hide does hold in some heat which is not what you want in warm weather. if you have to take the hide off then hang it in a mesh carcass bag to keep bugs off it and as clean as possible.
