Usually we do the backstraps country fried style with white pepper gravy and mashed spuds. Steaks on the grill a number of ways, like to use olive oil and different seasonings for marinating from fajita seasoning to hidden valley ranch to steak seasoning, key is marinating with the oil and seasoning the longer the better. Ground usually goes in chili or make italian sausage with it and use it in spaghetti. Use ground for jerky too. Inner loins been smoking whole.

1)Great marinade for loin steaks .... Marinade containing soy sauce, garlic, dash of mustard, salt/pepper, fresh onion and water - marinate overnight ....... Grill to medium rare ....mmmmmm. Tender and great taste.

2)Marinate in Western dressing ..... Grill to med rare.

3)Take ham from hindquarter , trim fat and freeze. Slice thin (while frozen) with a good meat slicer and cook in a covered pan with fresh onion and mushrooms ...... Outstanding on a good hard roll. For a twist sauté with garlic.

4)Take above sliced ham cooked and cut into small pieces. Mix with cream cheese and seasoning of choice ( garlic for me) and set aside. Cut whole jalapeño in half length wise, remove seeds if you are afraid of the hotness. Fill inside of each half of the jalapeños and place back together. Wrap with bacon and hold in place with a toothpick. Grill until bacon is crispy and jalapeño is tender .......

too many... you tell me what you're making and i'll give you one. lol hickory smoked A1 jerky? sweet Hawaiian brown sugar bbq jerky? sweet bbq habanero margarita pulled venison? grilled/blackened steaks? citrus marinated/walnut crusted steaks? buttermilk and cornmeal fried steaks? apple and cherry wood smoked venison roast? Caribbean jerk marinated roast? gourmet seasoned wine infused burgers with bacon and smoked gouda cheese? Italian garlic parmesan venison meat balls with pasta? ....maybe something simpler like venison hamburger helper? lol

for now try this..... http://www.realtree.com/forums/realtree-chuckwagon/91061-bacon-wrapped-deer-bites-6.html#post1339362 I've tried it and it's good. easy to cook too without over cooking them. keep in mind a steak is probably the hardest way to cook venison. venison cooks quickly from rare to well done. you only want to cook a steak to medium rare then take it off the heat. it will continue to cook to medium just sitting on the plate. the resealing marinade bags from Jack Daniels are easy to use and taste great.

Deer recipes

Tried this last weekend and it was great! Deer heart sliced into 1/2 inch steaks. 1/2 stick butter in fry pan. Drop steaks in flour mixed with rosemary, chili pepper, salt, pepper, and garlic powder. Cook each side for 5 minutes or longer if you prefer
