Shaun_300 Posted March 16, 2005 Report Share Posted March 16, 2005 hey all, wanted to share with ya's how i cook my fish... man its good! its really simple, all i use is half flour, and half pancake mix. i whip a few eggs in a bowl, and then dip the fish in the egg, then in the mix of flour and pancake mix. then throw it in the frying pan, i use oil, bacon fat, or butter. all tastes AWESOME! you could add some seasoning to it as well to add a special flavour, depending on your preference. give this one a shot! fisherguy Posted March 21, 2005 Report Share Posted March 21, 2005 Re: Fish Batter I do pancake flour, a bit of cornmeal for crunch, seasoning salt, pepper, dill, paprika, lots of garlic powder, then shake the moist fillets in that and fry in vegetable oil. oldksnarc Posted March 28, 2005 Report Share Posted March 28, 2005 Re: Fish Batter Try these: 2-3 lbs fish fillets 2 cups seasoned bread crumbs 1 cup shredded Parmesan cheese (not grated) 3 eggs 1-2 Tbs milk Shortening or Peanut Oil salt and pepper to taste Mix bread crumbs and cheese in bowl. In separate bowl whisk eggs and milk. Dip and coat fillet in egg mix then in crumb/cheese mix. Repeat. Place in hot oil and cook until golden brown. Remove and drain for a few moments on paper towel. Serve. The secret is in the double-dip. OR: 2 packages of instant mash potatoes. Garlic and Butter flavor. Equal part of Italian bread crumbs. Equal part of white flour. 1/4 part of "Tony Chachere" Creole seasoning OR Seasoned Salt and Cayenne pepper mixed equally to taste. 6 eggs milk Mix dry ingredients in one flat dish.
