VTbowman Posted April 19, 2005 Report Share Posted April 19, 2005 A friend of mine (vtbowhunter) suggested I just breast out my 1st bird and grill it. Marinaded of coarse. I opted to leave it whole and pluck it for roasting. Like we do for thanksgiving with a store bought turkey. Bad idea. Well sucky idea more or less. It sucked to pluck, and it did not have enough meat over all to make a hill of beans. The breast meat is where its at on a wild bird. Unless they are huge. The big difference is the toughness of the meat. Wild birds work for a living and their muscle mass is much more dense and they have very little fat compared to their domestic cousins. I like to brine the bird over night in a container of saltwater. Then, I inject it with Cajun Butter and deep fry it. Baking works great as does the grill. Wrapping in fig leaves helps keep the meat moist on the grill. It also adds a great taste. A good friend pressure cooks them first. Lastly, I normally only breast out the bird.
