Hard to beat steak and baked potatoes, but fried venison and mashed potatoes is always good. My mother-in-law also cooks up a dish ( don't know what you call it) with baked pork chops layered with onions, mushroom soup and sliced potatoes in a big casserole dish. Dee-lish. tongue.gifwink.gif

Deer meatloaf sounds like something I need to try to some of the venison in my freezer. Got a recipe?

2 lbs of deer burger

1/2 of a chopped onion

2 eggs

2 slices of bread (tore into pieces)

1 1/2 cup of catsup

2 tbl spoons BBQ (optional)

5 pinches of salt

mix it all together with hands and form it into a football lookin loaf

put it in the pan and will pan 1/3 of the way up the meatloaf

you can put potatoes and carrots around the loaf

bake for 2 and a half to 3 hours on 350*

"Mule Deer Surprise"

Made this last year in Utah deer camp and it was a big hit.

Tenderloins from one sage fed mule deer, left whole

Marinade in red wine along with a dash of Worchestire and a tablespoon full of Tony's for several hours

Wrap in foil along with sliced bell peppers and onions and cook on a grate over a campfire for about 20 minutes per side, only turn once

Boil a pot of new (red) potatos mixed with green beens

Get out of the way of the hunters when they come in from the field!

While I have never really been a big tater fan, I prefer spazle. Its a German pasta. Blacken some deer tenderloin with bacon and seasoning to your liking, make gravy from the drippings and spread on a bed of spazle. MMmmmmmm good!

I've never tried to blacken venison. Do you do it the same way as fish? Do you slice it? How thick?

I just give it a season rub of my favorite ingredients (salt, pepper, garlic) and sear it in a cast iron skillet with a little just smoking hot bacon grease. I fry up a couple strips of bacon first. I like my steaks thick (1.25"-1.5" or so) so they are medium rare and just blackened on the outside. This is about 3-4 minutes max.
