Re: Any good camping recipes??

Do yourself a favor and get a camp-style(with the legs and flanged lid) DUTCH OVEN!!!! Best thing we ever got for camping. You can make everything from meatloaf to stromboli, pot roast, stuffed pork chops, turkey..........can even bake cornbread, brownies etc.......................anything you can do in a kitchen, you can do camping with a Dutch oven. Now, most things take an hr or 2 to prepare, but are super easy.

I have a 12" deep Dutch oven, 10" standard and 12 in standard. One weekend we did a 10 lb turkey in the Deep DO and a chocolate layer cake in the standard DO. You should have seen the looks we got from other campers wondering where we got the food! shocked.gifgrin.gif

I love Dutch oven cooking now, and give my wife a break when camping. I am the official cook now! It's fun and you get kind of that "Frontiersman" feel when using them.

Alot of the recipes I use include the potatoes and veggies- so it's kind of a one-pot meal. Makes it real easy!!!! cool.gif

Here is my favorite. Fill the cavity of a trout with sliced potatoes and onions. Add oil or a 1/4 stick of margerine to the cavity. Then spinkle with butter and herb seasoning (or whatever your favorite is). Roll individually with foil tightly them toss the on the hot coals of a campfire. About 15 minutes on a side and Wa-La, a feast better than any 5 star restaurant.

Ribs are easy and everybody likes them.

Par boil them at home and then soak them in BBQ sauce until your ready heat them back up. Then just throw them on a grill until they're hot. Works every time people love it.

---------------------------------------------------

We always deep fry a turkey too. Everybody loves that. Let it cook while your sitting around the fire. 350 degrees 3 1/2 minutes per pound. Perfection.

--------------------------------------------------------

Kabobs are really easy. Cube some pork and beef. Cut up some peppers and onions, stick some baby tomatoes on the skewer cook them on the grill. Yeah buddy!! Dinner time.

-----------------------------------------------------------

Roast beef sandwiches.

Sliced Roast beef, Peppers, Onions, Mushrooms, White american cheese, Mayo, Worcestershire sauce, sandwich rolls.

A pound will feed 4 adults easily. With a pound of roast beef you want 1 Big onion, 1 or 2 green peppers. and about 10 or 12 sliced mushrooms.

First cut up the peppers and onions and saute them for a few minutes, cut up the roast beef and when the peppers and onions are soft enough for your taste throw in the roast beef and the sliced mushrooms. A few dashes of worcestershire sauce, simmer until hot and your ready.

Slather a lot of mayo on the roll, scoop in your toppings, top with White american cheese and you are ready. Probably takes 15 minutes. Cooked Jalepenios mixed in make this dish PERFECT.

----------------------------------------------------------

Breakfast.

5-6 big potatoes, 6-8 eggs, 1 pound K.C. Style bacon, 1 pound breakfast sausage, 1 1/2 Big onions, a couple of trout if your fishing. Should feed 6-8 people. Two deep frying pans with lids.

Slice the potatoes and cook them in oil until they're soft. Cook everything except the eggs seperately. Mix it all together. Then crack the eggs and throw them in, keep stirring until the eggs are cooked and not runny. Top with cheddar cheese and heat until melted.

This is not the easiest but it's GOOD. Usually we camp with a lot of people. The ladies typically help cut up everything and I do the cooking. If you have hot food lovers, This recipe should be topped with Franks' Red Hot hot sauce and / or cooked Jalepenios.

Try making kabobs from deer tenderloin. Put a hunk of bacon on each side of every piece of deer. then whatever else you want, onions, pepper, mushrooms. Cook em and the bacon grease will soak into the deer. Trust me it is the best venison I've ever had.
