Game spice rub Seasoning (4-6 steaks): 1 tablespoon salt 1/4 teaspoon ground white peppercorn 1/4 teaspoon minced rosemary 2 fresh bay leaves, minced 1/2 teaspoon juniper berries 1/2 teaspoon minced thyme Combine and crush then rub on steaks. Deer steaks – Preheat casket iron skillet for 5 minutes MED/HIGH. Add 2T of vegetable oil. Cook for 4 minutes on each side. Fill onto oiled hot spot in skillet. Rest for 4 minutes. A nice Kansas City style rub is: 1/2 cup brown sugar 1/4 cup paprika 1 tablespoon black pepper 1 tablespoon salt 1 tablespoon chili powder 3/4 tablespoon garlic powder 3/4 tablespoon onion powder 1 teaspoon cayenne It has a bit of a sweet taste from the brown sugar. It is typically used in conjunction with a sauce. A traditional Memphis style rub that is a little spicier is: 4 teaspoons paprika 2 teaspoons salt 2 teaspoons onion powder 2 teaspoons fresh ground black pepper 1 teaspoons cayenne The Memphis style is usually dry ribs (no sauce). Snipe Posted August 21, 2005 Report Share Posted August 21, 2005 Re: Simple rub This is a all purpose dry rub I like to use... 2 Tablespoons Black pepper 2 Tablespoons Paprika 2 Tablespoons Onion powder 1 Tablespoon Brown sugar 1 Tablespoon Chili powder 1 Tablespoon Coarse salt 1/2 Teaspoon Ground sage 1/2 Teaspoon Ground nutmeg 1/4 Teaspoon Cayenne pepper, If you want more bite add 1/2 Teaspoon Mix all the spices together and store in an airtight container for up to 8 weeks.
