AJ
I had a busy day yesterday. I made 10 pounds of venison brats and 15 pounds of venison summer sausage. I was up till 1:00 AM waiting for the summer sausage to finish smoking. After an ice bath and setting up in the fridge, today I tried some and MMMmmmmmm, its some good stuff. AJ
Re: Busy Day... [ QUOTE ] You ever try putting diced jalapenos and cheese in you summer sausage, or is that just a Texas thing? [/ QUOTE ] Not me. Heat is not a flavor to me. I like a little spice but not the heat. I don't care for jalopenos flavor anyhoo.
oldksnarc
Re: Busy Day... The guy that does my processing does the jalepeno/cheese thing and man is it good. One thing I've found is cooked jalepenos don't have a lot of heat to them like pickled and fresh do. And they do add flavor and just the right amount of spice.
