JIMMY BUFFET'S BARBADOS STYLE CHICKEN from Emeril Live EM1G32e [ email recipe to a friend ] [ display recipe in printable format ] Ingredients needed: 2 chickens, halved Olive oil 2 tablespoons fresh thyme leaves, plus sprigs for garnish 4 pieces Cuban bread Black beans and yellow rice, as accompaniment SPICY BARBADOS PEPPER SAUCE: 1 whole red onion 1 cup diced red pepper 2 seeded Scotch Bonnet peppers 2 whole papayas, peeled and seeded 1 bulb fresh garlic, separated into cloves and peeled 1/2 cup lemon juice 1 cup malt vinegar 3 cups white wine 2 tablespoons dry mustard 1 cup water 2 cups sugar 2 cups yellow mustard For the Sauce: In a food processor, combine onion, red pepper, Scotch bonnets, papaya, and garlic and pulse to chop. Transfer the finely chopped ingredients to a saucepan. Add lemon juice, malt vinegar, white wine, dry mustard, water, and sugar. Bring to a simmer over low heat. Cook slowly until the mixture is thickened, about 30 minutes. Remove from the heat and stir in the yellow mustard. For the chicken: Preheat the oven to 400 degrees F. Season the chicken well with salt and pepper on both sides. Place in a baking dish. Drizzle with olive oil and toss with thyme. Bake until the chicken is just cooked through, about 20 minutes. Remove from the oven. Cuban Bread: While the chicken is cooking, prepare the Cuban bread. Preheat a sandwich press or 2 cast iron skillets, 1 a little larger than the other. Slice the bread in 1/2 horizontally. Spread both cut sides with butter. Press the cut side together and place in the sandwich press. Close and toast until golden brown and the butter is melted. If using skillets, place the bread in the larger skillet. Top with the smaller, heated skillet and cook until both sides are golden brown and the butter is melted. Preheat the broiler. Brush the sauce on the chicken, coating well. Place in the broiler and broil until the sauce bubbles and starts to brown. Remove from the heat and serve with cuban bread, black beans, and yellow rice. Garnish with thyme sprigs. Yield: 4 to 6 servings These might be easier for taking to a party.... Margaritaville Salad With Grilled Shrimp Recipe by: Margie Potts Web produced by: Neil Relyea 8/27/04 2:30:55 PM Margaritaville Salad with Spicy Grilled Shrimp Here are recipes for Margaritaville Vinaigrette, Spicy Grilled Shrimp, and Margaritaville Pico de Gallo! You can serve this salad in a giant margarita glass, large bowl, or in individual margarita glasses. Use your imagination incorporating your favorite tastes and remember to play a little Jimmy Buffet music while you’re preparing and serving and just have fun!!!! Grilled Spicy Shrimp 1 ½ - 2 lbs. Fresh Raw Shrimp, cleaned, shelled, deveined – can leave tail on 1/3 Cup Olive, Peanut, or Canola Oil 1 Tab. Chili Oil 2 Tab. Cajun or Creole Dry Seasoning Cayenne Pepper or Hot Sauce to taste – if not enough heat in Creole Seasoning Combine all ingredients except shrimp. Pour over shrimp in resealable plastic bag and marinate ½ hour to 2 hours. Grill just until shrimp turns opaque. Do not overcook shrimp. Margaritaville Vinaigrette 1/3 Cup Fresh Lime Juice 2 Tab. Tequila* 2 Tsp. Triple Sec* 1 Clove Garlic ¼ Tsp. Ground Cumin ¼ Tsp. Cayenne Pepper ½ Tsp. Margarita or Kosher Salt 1/3 Cup Canola Oil ¼ Cup Fresh Cilantro, chopped Combine first 7 ingredients. Slowly add oil, whisking until smooth. Stir in cilantro. You can substitute 2 Tablespoons of Fresh Orange Juice for the Tequila and Triple Sec. Salad Ingredients I always present this salad in oversized Margarita Glasses, but this salad is so colorful and so flavorful, any fun presentation will work. When I present in Margarita Glass, I first rim the glass with fresh lime juice and then press the juiced rim of the glass into minced cilantro. Add any of the ingredients below to your salad greens– keeping in mind lots of color and flavor – and toss with some of the vinaigrette. Place tossed salad into the prepared Margarita Glasses. Arrange a slice of lime to the rim and arrange 6 or so grilled shrimp to the side – tails up! Stick in some colorful Tortilla Strips also to the side (recipe below) and you have a delicious Margarita Masterpiece. Don’t worry --- make it fun! Toss an assortment of mixed salad greens with any of the following: Red, yellow, or orange Bell Pepper, sliced into thin strips Sliced Hot Peppers Sliced Green Onions Chopped Tomatoes Black Beans, rinsed and drained Roasted Corn Kernels Chopped Avocado Black Olives Pepper Jack Cheese, cut into cubes, or Crumbled Mexican White Cheese Chopped Jicama Chopped Mango, etc. Tortilla Strips: Buy colorful, flavorful Tortillas found in Jungle Jim’s refrigerated area in the Mexican/Caribbean section. Try Chili Lime, Jalapeno/Cilantro, Sundried Tomato, etc. Simply cut the tortillas into thin strips with a pizza cutter. Saute in a little oil over medium-high heat until golden and crisp. Sprinkle with Kosher salt. Store in an airtight container. These are fabulous and fun. You can also cut these same tortillas into wedges with a pizza cutter to serve with the Margaritaville Pico de Gallo below – what a great appeteaser! (Also, come this fall for Annie, who is looking for a great chicken toritilla soup, we’ll be using this tortilla strip recipe PLUS a fantastic soup recipe!!) Margaritaville Pico de Gallo Tomatoes, seeded and diced Red Onion, finely chopped Garlic Cloves, minced (or to taste) Jalapeno or Serrano Pepper, minced (or to taste) 1 Tab. Fresh Lime Juice 1 Tsp. Tequila ½ Tsp. Triple Sec ¼ Cup Chopped Fresh Cilantro Salt and Pepper to Taste (I also add ¼ Tsp. Of Ground Cumin and a handful or so of sliced Green Onions) Mix all ingredients and chill.
