As far as just butchering, I do all that myself. I bone out everything, cut it, and package it up for the freezer. If I want to get some sausage or something like that processed, I'll take the boned out meat to the processor. Processors charge by the pound so I don't want to pay them for the weight of the bone.

Here is a pic of our packing crew. Scott's wife Sue is on the left, and my wife Jen is on the right.This is the last deer we did before we bought 2 foodsavers. Now we vacuum pack all our venison.

i butcher my own deer . i cut the back straps and tenderloins out and then bone out the rest of the deer..

i then take the boned out meat to a local locker and have them grind it for me.. they do an outstanding job every year .

last year i took 43 lbs of boned out meat to have it ground into burger and breakfast sausage . it cost me 18 bucks ! thats wrapped , packaged to my specs and added pork to the ground meat..
