oldksnarc Posted September 12, 2005 Report Share Posted September 12, 2005 Doves Deep-Fried and Smothered in Gravy 12 doves, plucked and drawn 2 Tbsp. butter cooking oil, preferable canola or peanut 1 Tbsp. flour 1 c. heavy cream 1 c. milk 1/2 tsp. salt 1/2 c. flour 1/8 tsp. pepper When cleaning the doves, reserve the hearts and livers. Into a heavy deep skillet put enough oil to bring the depth to a little over 2 inches. Bring to high heat. Dip the birds in milk, then roll into flour seasoned with salt and pepper. Drop the birds 2 to 3 at a time, so as not to reduce the heat too much. Do not over crowd the pan. Cooking time will be about 2 minutes, do not over cook, they will cook more in the gravy. Remove to paper towels on a warm platter to drain. Pour off the oil, leaving the drippings and flour bits. Chop the reserved hearts and livers. Put in the butter and when it is hot add the chop parts, and sauté. When they are nicely browned, sprinkle the tablespoon of flour into the pan and stir to a light tan paste. Add enough milk to the dipping milk to bring it back to a full cup, pour this and cream into the skillet, stirring vigorously to combine and dissolve the flour-butter mixture into a creamy gravy. Reduce the heat to a low simmer, do not let boil. Return the doves, and using a spoon, turn them to cover well. Place a lid on the skillet and let simmer for 15 to 30 minutes, or until the doves are tender and juicy. Can place the skillet directly on the table and serve from it, or place the doves in a warmed bowl and pour the gravy on top. Quote Link to comment Share on other sites More sharing options...

Smothered Dove 12 dove salt and pepper 2 sticks butter Worcestershire sauce juice of 4 lemons Season birds with salt and pepper. Melt butter in skillet. Add birds and brown quickly. Add enough water to cover birds. Simmer, covered, for 1 hour. Remove birds. Thicken liquid by adding flour mixed with water (1/2 tablespoon flour for each cup of liquid in skillet). Texas June Bugs 5-6 dove breast per person boned out 2 Large white onions sliced into 1/2" strips 12 large Jalapenos sliced into 1/2" strips 1 Bottle of Tabasco Chipotle Hot Sauce 1 Package of Bacon Wood or metal skewers Take the dove breast and put it in a bowl with 1/2 to the full bottle of hot sauce to marinate while you cut your veggies. Once you have your onion and peppers cut take 1 one whole breast and put 1 onion and 1 pepper in between the meat. Then wrap that with a 1/2 of a slice of bacon and put it on the skewer. Use a toothpick to hold them together and then marinade in Italian dressing for at least 4 hours. Overnight will not hurt. Stick em on the grill for about 7 minutes each side. They are delicious.
