horst Posted September 21, 2005 Report Share Posted September 21, 2005 Re: feild dressing Your bound to get a lotta different answers to that.I use a guthook knife.Start at the bottom and cut away the testicals/or milk sack.Dont get into the guts, cut very shallow.Next take your knife and make a small incision, without popping the gut through the hide and muscle down where you just made the first cut.Turn the knife over and hook the gut hook into this incision, pull the knife up towrds the ribcage, it should open the stomach up like a ziper.When you get to the ribcage theres a seam in the middle of the ribs, if your not gonna have the deer mounted you can turn the knife over and use the blade to rib the ribs open right up the middle. Next go back to the bottom and cut inbetween the legs, theres whats called a hitch in there.Yo need to split it.Cut down through the meat untill you hit bone, someone may have to show you how to split this properly once, get off to the side and its hard to do.There should be a spot in there you can cut through the bone with your knife tip, and then using a lotta force you bust right through the bone . After this stick your hands up in the cavity, find the windpipe with one hand and follow it up as far as possible.Holding it with one hand, you need to cut through it with the other.Then just grab it and pull backwards, the guts should roll out.Youll find another spot near the lungs you might need to cut away from the body but it should just roll out for the most part. Pull it all out between the hind legs, cut around the anus and it should be free.Then just roll it over and drain the blood out of the cavity.Hope this makes sense, might be kinda hard to follow, its easier to show someone than to describe it Quote Link to comment Share on other sites More sharing options...

I do not break the pelvis on the deer in the back. I make an incision right above the testies and up to the rib cage. I then pull out the guts, then cut open the inner lining to the lungs and heart and rip those out, then grab the throat and cut as Horst said. Then cut out the bung and rip it out. I learned this the hard way. Now I leave it and earn $20. I also take a rope to the woods with me and I hang it up by the neck before I gut it. Never split the pelvis either, we hang the deer by the neck and let gravity help pull after cutting the windpipe, everything falls right out. We just haul it up to his garage, skin and start hacking off meat. We do get some interesting looks and comments at the check station though. Works for us. If it is possible I don't dress them in the field. Usually I can get the deer back to camp whole and hang it up to start the work. I do hunt prepared to field dress with all the neccessary things in my pack. I always carry a set of palpating golves ( shoulder length disposable gloves used for palpating cattle ) , a good sharp knife, a cable saw for the pelvis, a couple of disposable towelets, rope , and cheese cloth cover. I would recomend letting the deeer hang a day or two after field dressing if the weather permits, if not then I will quarter the deer asap and place it in a cooler. I pack the cooler with ice and pour 1 full bag of salt over the top then I let it sit for two or three days with the drain open to let the water run off. The salt helps take any blood and impurities out of the meat and hinders bacteria growth.I have found that the venison taste alot better. There are several ways , this is just my way. I've also never seen a gut-pile ruin the hunting in a spot, in fact it's a wise decision to hunt over a gut pile the next day, since deer are curious.
