I have several excellent recipes, and they all start with my wife who performs culinary miracles on all the game I bring home. Here's a goose recipe that I've posted here in the past, and is a throwback to my bachelor days... One of my favorites: Clay's Gourmet CrockPot Goose Breast meat from one or two geese 16 oz fresh mushrooms sliced 1 medium (3") onion diced 4 stalks of celery diced 1-4 diced Hungarian Yellow peppers (OPTIONAL - these babies are HOT) 1 tbs salt 1 tsp black pepper 1 can cream of mushroom soup 1/2 of above soup can milk cut breasts into thirds, rinse and pat dry. Place on bottom of crockpot. Mix all other ingredients in large bowl then pour over meat in crock pot. Cook on low 8-10 hours. Serve over egg noodles or mashed potatoes. The hungarian peppers are completely optional. I like them, but they're too hot for my kids so I haven't added them when the kids are eating it. Duck Gumbo is my favorite: 3 Ducks cut into serving pieces 1/2 cup Oil 1/2 cup All-purpose flour 1 lb smoked sausage, sliced about 1/4 inch thick Zatarain's Creole Seasoning to taste 2 packages Zatarain's Gumbo Base 1 medium package of unbreaded sliced okra 12 cups water or chicken stock In a large heavy pot, heat 1/2 cup oil. While oil is heating, dust duck pieces with flour and lightly season with Zatarain's Creole Seasoning. Place duck pieces into hot oil. Brown on all sides. Remove from skillet and set aside. To pot, add 12 cups water or chicken stock and Zatarain's Gumbo Base. Stir thoroughly. Add duck and sausage, stir, and bring to a boil. Reduce heat, cover and cook over low heat for 2 hours or until duck is very tender. Serve over rice. As far as goose recipes, I just slice the breast into strips and soak it in lightly salted water until the meat is almost completely white. You may have to soak them several times to remove all the blood. After that I dip them in Dale's sauce, lightly batter them and fry'em up. Yum yum!!!
