I have cooked it a couple of times, but didn't really like the flavor (very strong even after cutting off everything that wasn't meat). BEAR SAUSAGE 30lb. bear meat, ground 12lb. pork butt, ground 3lb. slab bacon, ground 7tsp. pepper 6tsp. red pepper 15tsp. garlic salt 15tsp. salt Mix all together. Fry in pan for breakfast sausage, good on pizza, and makes nice little meatballs for hors d'oeuvres. ( package as you would burger or stuff sausage skins...it's up to you) ROAST BEAR SHOULDER 5-8 lbs. bear meat (shoulder or round) 3 tbsp. bacon drippings bacon strips 2 lg onions 3 ribs of celery, with leaves 1 carrot 1 tsp. mixed herbs (your choice ..I like montreal steak spic, plus some garlic) 3 cloves (whole) 2 bay leaves, crushed 1 cup. beef stock 1 cup. red wine salt & pepper to taste flour (or corn starch) Heat bacon drippings in a large skillet. Brown meat on all sides. Season with salt & pepper. Place in roasting pan. sprinkle with herbs and garlic, and lay bacon strips over roast (coving the entire top) and Add vegetables. Add liquids. Cover tightly and bake in a 225' F oven for 8 hours. DO NOT UNCOVER DURING COOKING When done, remove roast to heated platter. Strain stock, disgarding vegetables. fisherguy Posted November 5, 2004 Report Share Posted November 5, 2004 Re: Any good bear recipes? The key with bear is to get all the fat and bone off it before you freeze it. Otherwise the fat smell gets into the meat while it's frozen. If you have some that tastes strong use it for sausage or stew. It makes great stew meat. I used bear shoulder meat and cooked it in the crock pot and then pulled the meat off. After I pulled the meat off of the bone I put it back into the crockpot with the bbq sauce and cooked it for several more hours on low. I cooked it like this at a birthday party a couple of months ago and no one had a clue that it was bear. Everyone thought it was pork. It was yummy!!
