I'm just curious to see how many guys & gals butcher their own animals. We do.So far this year our group has done 8.My 14 year old neice even helps out.Last night we did the last 2 that we had.We just put down polly on the bar & floor & use some old table tops. One guy told me that he paid 95$ to get his deer cut & rapped & some jerky made.No thanks I'll do it myself.

Re: Do you butcher your own deer?

I use to but I just dont have the time anymore. I now drop it off. It cost me about $60-$65. I am not in the "Kill everything in sight" mode anymore which is a good thing. There have been years that ive killed roughly 5-deer. I now take 2-3. Its much cheaper.... wink.gif

Re: Do you butcher your own deer?

We do all our ownd deer. There are 4 of us that hunt, and when one of us gets a deer, ussually at least 3 of us get together to butcher it.My wife, and sister-in-law do all the packaging. It has become part of the hunt, and I look forward to it now. It is always an enjoyable time.

I also like the fact that i know that I have all of my own meat, and how it was handled.

I butcher my own. I like knowing that I get my own meat back instead of getting meat from someone's deer that was gutshot and hauled around in the back of a truck in 70 degree heat while showing off to their buddies. Butchering my own became a whole lot easier when a buddy of mine installed a walk-in cooler in his shed. wink.gif

Re: Do you butcher your own deer?

Butchered all our own until we had kids and didn't figure we needed a bloody kitchen. For a couple of years, took deer to the local locker. The quality of the end product got so bad it was either quit hunting or start butchering again. Any guesses on which way I went?

The local locker does "deer stew". You get your poundage back, not necessarily your deer. I talked to a person we let hunt one of our farms, asked him how they did. They said they shot a decent buck, but his antlers pulled off as they tried to pull him up the hill to the truck (December in Iowa). He also commented that the bucks hooves were "slipping". I asked what they did with the buck and was told they TOOK IT TO THE LOCAL LOCKER! EEEEWWWW!

Lockers are in it for speed. They get paid by the deer. I would encourage everyone to completely bone out their deer, removing every scrap of fat and sinew/muscle sheathing they can, then compare this to what a locker has done. Hopefully, you will be a convert.

If your having sausage made, take your old boots in when you drop off your deer. I have a friend who has stated that 'coon and muskrat make good sausage (and I'm sure they do!).

As far as mixing suet with venison when ground, why would you take a healthy, naturally lean meat (if you've trimmed it right) and add fat? Not for me, but you can decide.
