Smitteken
Who here makes deer burger? We always make our own sausage but never make burger? I would imagine you would want to mix some beef or pork in it, if not it would be too dry. But how much? Any help would be appreciated. Does anyone have a recipe for Deer brats? Gator
Re: Deer Burger/Brats Smitteken, I use LEM Seasonings for my brats, and to me they are the best darn BRATS I have EVER tasted, and I have had the real ones from Germany, thay are that good. As for burger, I don't add anything to them. For my brats I get a Boston Butt, and grind it up, then go by the directions on my seasoning package, but I usually add about wo more tablespoons than what is called for. Guest lostiniowa
Re: Deer Burger/Brats i get some deer into hamburger and the butcher adds beef fat for really cheap. I use it for everything chili, hamburger helper, tacos. It tastes great and is really good for you. Also, most people cannot tell it is deer the only way is that its a little smaller and granier than hamburger.
AJ
Re: Deer Burger/Brats I usually add 10% beef fat when I make burger. For Brats I add 50% pork like Gator does, I add a Boston Butt (pork shoulder) and grind it all up. I used Cabelas seasonings and stuffed into casings. MMMmmmmm good. Reloader
Re: Deer Burger/Brats For Sausage I add Pork fat but for burgers I just fry them in butter or cook them fast on the grill so they keep the little moisture they have. Never done brats...anyone have a recipie for them?
longislandhunter
Re: Deer Burger/Brats I also add beef or pork fat into the venison most of the time, although I personally like the pork fat better. I usually add around 15 % pork fat to the ground venison and it comes out great.
