I looked at a bunch of recipes and combined them into this. Everyone that has tried it loves it. 1 LB. GROUND VENISON 1 LB. VENISON STEW MEAT (cut small) 3 15 OUNCE CANS KIDNEY BEANS 1 LARGE CAN STEWED TOMOATOS 3-5 TSP. CHILI POWDER ¼ CUP CHOPPED ONIONS 2 TBSP CRUSHED RED PEPPER MINCED, OR FRESH CHOPPED GARLIC 1/4 CUP TEXAS PETE, RED DEVIL, (or similar) HOT SAUCE In large pot, brown venison, garlic, and onions. Use garlic according to your taste. I personally like a lot of garlic. When venison is browned, add kidney beans, tomato’s, chili powder, onions, crushed red pepper, and simmer. I usually simmer for at least 2 hours. After simmering, add hot sauce and simmer for at least another 15 minutes. Now is the time to taste test and add hot sauce, chili powder, or red pepper if you feel it needs more flavor. NOTE...if you like your chile not as soupy, drain the kidney beans before you add them and reserve the liquid. Course Ground Venison 1 Can of Whole Tomato's 32Oz. 2 Cans of Diced Tomato's 15Oz. 1 Can of Tomato Sauce 5Oz. 1 Large Onion Chopped 4 Cloves of Garlic Chopped 2-3 Fresh Jalapenos Chopped (3 if you like heat) 4 Tbs. Chili Powder 1 Tbs. Cumin 1/2 Stick of Butter Saute chopped onion in butter until clear. Move to side. Brown venison in dutch oven then half way through add 1/2 of the garlic and 1/2 jalapeno. Add whole & diced tomatos, sauted onions, chopped garlic and jalapeno, chili powder and cumin. Bring to a boil and then reduce to a simmer... Cook for about 30 min. then add tomato sauce and a can of water as needed. Simmer 30 min. and taste.. Add salt if needed... If you like beans in your chili drain and add 15 min before serving. Harvdog’s Venison Chili Recipe© Ingredients: 1LB ground venison 1LB ground beef ½ can of Bud or MGD beer 32oz tomato juice 12oz can chili beans 2 – 3 12oz can kidney beans 12oz crushed or diced tomatos ½ green pepper 5 tomatillos diced jalapenos seeded and diced (6 – hot, 3 – medium, 1 – mild) 3 medium onions diced 6 seranos seeded and diced (optional) 3tbl ground cumin 2tbl cayenne pepper (sub Red Hot sauce) 1tbl garlic powder 1tsp oregano 1tsp salt (or salt to taste) 3tbl brown sugar Dash of liquid smoke Brown ground beef and then add ground venison. After meat has browned add diced onions, tomatillos, and onions. Cook until onions are clear. Add dry spices. Transfer to crock pot or slow cooker. I pretty much follow your recipe, except I add about 1 tbsp of cilantro, 1 tsp of oregano, and 1 tbsp of brown sugar. AND NO BEANS EITHER!
