I was kind of forced to have one butchered last week. The temps here have been way above normal. I shot my deer Thursday when it was hovering around 70 degrees. By the time I got him gutted and dragged out, it was about 7:30, by then, most all the check stations are closed. mad.gif

There's one butcher that will check deer very late into the night. I called and they said "bring it down, we'll be here skinning past 9." So off I went. I've used them before, and they do a nice job. I ordered 5# of their baloney (which is really good), and the total bill will be $82 for me. My deer dressed at 223# so I should get around 120#back, maybe more, we'll see.

Man, I guess the more North you get, the more of a rip-off the butchering is. Where I live in NC I can get any sized deer skinned, gutted and butchered into anything I want for around 45-50 bucks (5 bucks extra for added fat). At that price I'll keep taking them to the processor. I do usually skin 1-2 a season when I hunt my family farm. But close to home it's going to the processor.
