I marinate mine in Italian dressing and Dale's sauce for about an hour. Throw 'em on for about 15-20 minutes, turned one time, and there you go. Guest fourtrax_300 Posted November 20, 2005 Report Share Posted November 20, 2005 Re: how do you cook your backstraps on the grill? here is mine. it produces very good italian flavored meat add all of this into a bowl 1/2 cup of soy sause, 1/2 cup of worchestershine sause, 1 tbl of cajun seasoning, 1 tbl of aldoph's meat tenderizer, 1 tsp of onion powder, 1 tsp of garlic powder, then stir it up and add your backstraps. next cover the top of meat with beer of your choice. then cover the top of pan with plastic wrap and put in the fridge for at least 4 hours. then take the meat out and pat dry with paper towels and rub dry italian dressing on them and throw them on the gril and enjoy. I take 2 sheets of tinfoil,one on top of the other, and make a pan. I lay my steaks( preferably backstraps ) out on the foil. I put a small pat of butter on each steak.Sprinkle the steaks with Salt, pepper, Oregano, Basil. Whatever you prefer. I then slice an onion over the top of them, seal the top with another piece of tinfoil. Poke a few small holes in the top piece, and throw on the grill. Cooking time varied grill to grill. I marinate mine in Liquid smoke and Dale's seasoning sauce then sprinkle with dried onions then wrap them in bacon and place on a sheet of foil on the grill. I marinate a tenderloin roast in milk and worcesteshire sauce for a few hours. Season with a lot of pepper and garlic powder. Wrap in bacon and put on a chacoal grill with a piece of wet hickory for smoke. I set the meat on the opposite side of the grill from the fire so it smokes and cooks indirectly for the first 20 minutes or so. Then I move it above the the heat and let it cook pretty fast for the last few minutes. I usually take it off the grill when its medium rare. Its awesome trust me. I put every ingredient in the condiment and spices section (minus milk based products) including malt vinegar and Apple Cider vinegar. I use lots of Ketchup and mustard as well as ample supplies of every ingredient. I simmer ingredients to release all the flavors into the marinade and then place thick slices or butterflied style cuts into the marinade and shake it maybe 3-4 times over at least 24 hours. I wrap with bacon and place on hot grill for maybe 15 mins turning once and when bacon is done so's the venison. I sometimes cover with any deli cheese I like or have handy. I've had lots of compliments from people who said they hated deer or just wouldn't eat it before I made it for them. Delicious.
