AJ Posted December 19, 2005 Report Share Posted December 19, 2005 What are you having for your holiday dinner? Mine will be a standing rib roast that I smoke in my smoker. Here is how I do it. I use a simple rub of kosher salt, fresh ground black pepper, and garlic powder. I rub the roast and leave it set at least 4 hours. I preheat the SmokinTex electric smoker to 250 which takes 35 minutes or so. I use about 1.5 ounces of apple wood a twig of rosemary, and a garlic clove in the wood box and insert the thermometer deep in the roast. I don't want an overpowering smoke flavor. Just a hint of smoke. I let it smoke till the roast reads 125° and keep the door open to cool down the smoker. I drop the temp to 140. I wrap the roast in foil with a cup of beef broth and some butter and pop it back in the smoker to take it to 140° over 4 hours. I have the grill fired up and very hot (~650°) and ready at the 4 hour mark. I pull the roast from the grill and unwrap it. I give it a quick sear on the hot grill to crisp the outside and it's ready to eat. The center is a nice pink (medium) all the way through. Its extremely moist and tender.
