AJ
Re: Jerky Recipes? I like the Hi Mountain Jerky kits that Cabelas has. I have done a few and they have a good taste without overpowering the meat taste. It enhances the meat taste not replaces it.
VermontHunter
Re: Jerky Recipes? Here's Mine........ VENISON JERKY Ingredients: 2 pounds of very lean Venison ¼ C Worcestershire Sauce ¼ C Soy Sauce 1 Tablespoon tomato sauce 1 tablespoon vinegar 1 tablespoon sugar ¼ teaspoon dried chopped onion ¼ teaspoon dried chopped garlic 1 teaspoon salt Trim all traces of fat from meat. Freeze until firm and solid enough to slice into very thin ¼ slices. Then cut slices into 1-1 ½ strips. Combine all the above ingredients together in a blender or shake in a jar. Pour over meat strips that have been arranged in rows in a shallow baking pan or a marinating container, refrigerate over night. ( Occasionally mix contents to allow marinating of meat. Cover dehydrator trays with venison strips making sure that they are not touching each other to allow for proper air flow. Dry for 4 hours at 140- 150 degrees. At this time rotate the trays and dry for another 6 to 8 hours. Well-dehydrated venison should be dark and fibrous and brittle enough to splinter when bent in half. RangerClay
Re: Jerky Recipes? I agree with AJ 100%. Get a jerky shooter and the Hi Mountain kits. ONE WARNING! Do not share the jerky with your friends because they will eat it all up on you Ranger
billygoat
Re: Jerky Recipes? [ QUOTE ] I agree with AJ 100%. ONE WARNING! Do not share the jerky with your friends because they will eat it all up on you [/ QUOTE ] Isn't that the truth! I made my first batch of Jerky on Saturday. That evening the brother-in-law came over with the kids, and ate over half of it! I used 4 lbs of Venison, 1 lb hamburger. Ground the ven onto a cookie sheet (flat) then spread the hamburger over the top... reground the meat to "mix" it, then seasoned with Himtnjerky mix as directed. Since I had to work, I left it cure for 12 hours in the fridge, as opposed to the recommended 4 hours. Then smoked it in my smoker for about 2 hours (with apple wood chips). It was awesome! I want to order the INFERNO blend!

To me they are the best! I have no real favorites, because they all taste good. The Cabela's Teriaki is good too!
