I went to a butcher to pick up a deer with a friend and was met with the best smell i ever had. This guy roast the bear in like a big pig smoker and than cuts it up and buts it in roaster to marinate and im here to tell you it was the best Bear meat i ever tasted. In fact it was the best meat i ever tasted. I think that it took about 24 hours to roast and it might have been the smoker that was the secret.

Well a spring bear hasn't really ate much of anything yet-they mostly graze green grass when they first come out of the den. I'd tend to mostly sausage a spring bear-a nice fall bear the meat is pretty good-there's a good chance if you are bowhunting you might not find him till next morning-if that's the case-he'll only be fit for bait-they bloat up and stink pretty darn fast.
