But you have to remember that your bear will taste similiar to what it eats. If you shoot a bear that eats mainly berrys, good meat. If your bear eats mostly garage dumps, did not like meat at all. This guy roast the bear in like a big pig smoker and than cuts it up and buts it in roaster to marinate and im here to tell you it was the best Bear meat i ever tasted. In fact it was the best meat i ever tasted. I think that it took about 24 hours to roast and it might have been the smoker that was the secret. Well a spring bear hasn't really ate much of anything yet-they mostly graze green grass when they first come out of the den. I'd tend to mostly sausage a spring bear-a nice fall bear the meat is pretty good-there's a good chance if you are bowhunting you might not find him till next morning-if that's the case-he'll only be fit for bait-they bloat up and stink pretty darn fast.
