Snipe Posted January 27, 2006 Report Share Posted January 27, 2006 Re: What to do with my leftovers Most of the time when I have left over chicken from Baked, Broil, Grilled and even Smoked...I like to take it and de-bone and chop it up ...Put it in a bowl. Then take these items and fine chop no more than a 1/8 cup of any combo... Peppers ( Bell is good ) Carrots ( Shredded ) Onion Celery Mix with chicken and add a Tbs of Mayo at a time till you get it the right thickness...just a squirt of mustard and your good to go with chicken salad sandwiches...Or take it and roll it up in some Romain lettuce or stuff Large pasta shells with it and chill before serving... I debone the bird, chop the meat, and add some chicken stock, rice, and chopped baby carrots. I heat it till the rice is cooked and put it in bags for dog food. The dog loves the stuff.
