Most recently I've been soaking in milk for several hours, then cutting the breasts into strips, marinading with a cajun spice concoction in barbecue sauce, then searing over charcoal and mesquite. When they are falling apart, I drain them, and some BBQ sauce, Famous Daves is my favorite, and then let them cook a while longer. Some of the best BBQ sandwiches you may ever have. One of my favorites: Clay's Gourmet CrockPot Goose Breast meat from one or two geese 16 oz fresh mushrooms sliced 1 medium (3") onion diced 4 stalks of celery diced 1-4 diced Hungarian Yellow peppers (OPTIONAL - these babies are HOT) 1 tbs salt 1 tsp black pepper 1 can cream of mushroom soup 1/2 of above soup can milk cut breasts into thirds, rinse and pat dry. Place on bottom of crockpot. Mix all other ingredients in large bowl then pour over meat in crock pot. Cook on low 8-10 hours. Serve over egg noodles or potatoes. The hungarian peppers are completely optional. I like them, but there too hot for my kids so I haven't added them when the kids are eating it.
