As far as protecting the oil finish, you can protect it with Tru Oil. I give my guns that have oil finishes a new coat every couple years or if I use them a lot, every year. What accessories? I have added Pachmayr, Kick-Eez, or Gooey recoil pads to my o/u guns. I had the buttstock modified to an adjustable comb on my trap gun, and I added a custom unsingle barrel to it. I also have a custom stock in progress for my trap gun. I had the forcing cones lengthened and the factory chokes opened up on my trap doubles gun. I also added an Easy Hit sight to the this gun.
