Myself and few buddies are going to a cook off April 1. I have not done this since 1992. I received my conformation letter yesterday... It has changed a bit since '92 ...Along with the letter they sent 31 pages of rules.. shocked.gif

Looks like I have some home work...

OK...Heres one I do all the time at the house and property...

Snipe's Texas Red

1 1/2 Lbs. Course Ground Venison

1 Can of Whole Tomato's 32Oz.

2 Cans of Diced Tomato's 15Oz.

1 Can of Tomato Sauce 5Oz.

1 Large Onion Chopped

4 Cloves of Garlic Chopped

2-3 Fresh Jalapenos Chopped (3 if you like heat)

4 Tbs. Chili Powder

1 Tbs. Cumin

1/2 Stick of Butter

Saute chopped onion in butter until clear. Move to side.

Brown venison in dutch oven then half way through add 1/2 of the garlic and 1/2 jalapeno. Add whole & diced tomatos, sauted onions, chopped garlic and jalapeno, chili powder and cumin.

Bring to a boil and then reduce to a simmer... Cook for about 30 min. then add tomato sauce and a can of water as needed. Simmer 30 min. and taste.. Add salt if needed...

If you like beans in your chili drain and add 15 min before serving.

Looks like I have everything packed...I will be pulling out in the morning to get our chili camp set up.. We may have a chance of rain this weekend...But thats cool ..

We probably don't have a snowballs chance in winning but it will be fun...Should have pics too...

Here is the recipe I used for the cook off..

3 dried ancho peppers, stemmed and seeded

2 tablespoons dried oregano

2 tablespoons sweet paprika

2 tablespoons whole coriander

1 tablespoon cumin seed

2 tablespoon chili powder

2 tablespoons extra-virgin olive oil

2 onions, fine chopped

3 pounds ground venison or beef

Kosher salt and freshly ground black pepper

6 cloves garlic, fine chopped

1 canned chipotle chile, divined, seeded & fine chopped

1/2 jalapeno pepper, fine chopped

2 (28-ounce) cans whole tomatoes, hand crushed

1 teaspoon sugar

2 tablespoons mesa

In a small dry skillet over low heat add the ancho peppers, oregano, paprika, coriander, cumin, and chili powder. Cook until they begin to smell, about 2 minutes. Put the spices into a spice mill or food processor and grind until they are powdered. Set aside.

Heat a large heavy pot over medium heat; add 3 tablespoons olive oil and the onions. Cook until the onions are soft and beginning to caramelize, about 10 minutes. Season the meat with salt and pepper. Add it to the pot and cook, stirring frequently, until it has browned on all sides, about 10 minutes. Add 2 1/2 tablespoons of the toasted spice mix, the garlic, chipotle, jalapeno, tomatoes, and sugar. Season with salt and stir well. Add some hot water until the meat is just covered with liquid. Return to the boil, reduce to a simmer, cover, and cook for 1 1/2 hours. Stir in the mesa and cook for another 10 minutes, uncovered, to thicken.

Nope I believe we made it to the finals table but no further than that...The finals table is the top 25..

The chili that won had more grease on top than a 65' Belaire leaks oil...

Apparently grease is in ...Most of the top finishers had a oil slick... ooo.gif

Looks like we may make it to the Cowtown Chili Cook Off at Cabelas in Ft. Worth in June... wink.gif
