Don't listen to Gator. You scale them, filet them and "gash" them. This is simply making slices in the meat to cut the fine bones. Salt and pepper and meal them, them fry them. Besides, you're eating an animal that licks it's baby's genitals to make it go to the bathroom. (Deer) Actually Joe, they don't eat fish poop. That's a common misconception about these fish.
