Get the water boiling before you put the noodles in and stir frequently. Just before you drain the noodle, pour a glass of tap water in the pot. Drain slowly. Works for me. Soak in water a little while with some dawn dish soap, then put the pan on the stove over a medium heat and they should scrape out easily with a spatula. The oil actually keeps the water at a lower temperature since evoo boils or burns at a higher temp than most foods you cook with. That's and the flavor it adds to food. It also puts a nice golden brown to fried foods where as corn oil and veggie oil tend to burn things by having a lower temp of boil and burn.
