sureshot
I jsut got doen skining my daughters deer out and on the rump there is a puncture wound from what I am sure is a antler,it is abotu the size of a tine and abotu 2" deep and looked yellow, kind of ****, I cut a fist size chunk of meat out around it and everythign behind looks ok, color is nice and all!If the infection spread it should be discolored should it not? I am thinking it should be ok to eat what do you all think?
popgun
Re: old wounds?? I think it sounds as though you cut plenty out. I know this may sound gross, but give the meat a good sniff. Compare the sniff with another good sniff on a different leg. Now I'll bet that hunk you cut off smells a lot different than the part that is left. It was probably just a little local infection from the puncture wound. The rest of the deer is fine. .....popgun

MUDRUNNER
Re: old wounds?? IT SOUNDS LIKE YOU CUT IT ALL OUT.I WAS TALKING TO MY PROCESSOR LAST YEAR AND ASKED HIM ABOUT INFECTIONS IN THE MEAT,AND HE SAID THERE WILL BE A DEFINATE SMELL TO ANY INFECTED OR TAINTED MEAT. horst
Re: old wounds?? Ive done the same thing.Shot a doe a couple years ago that had a wound up high on her back from the shotgun season a week before that.It was slightly discolored and kinda watery looking in about a 3 inch circle around the hole in her backstrap.I cut it off about 5 inches on either side of the wound and it was fine.
