DU_man_84 Posted May 8, 2006 Report Share Posted May 8, 2006 Re: I need a recipe for trout when im out west and trout fishing, filet em up leave the skin on em, get yourself some tin foil and spread some oil on it, lay your filets on it, put slice of butter on each, then i like to add my spices, salt, pepper, garlic salt, and some italian seasoning, then last take a slice of lemon and squeeze it over each piece and put the piece of lemon on top of the filet, take it and put it on the gril and cook it till it starts to turn white, take er off and add whatever your favorite sides are to the plate and you got a great meal Quote Link to comment Share on other sites More sharing options...
Hoosierbuck Posted May 8, 2006 Report Share Posted May 8, 2006 Re: I need a recipe for trout I like to make a foil pouch for trout/salmon and put the fillet on there, sprinkly liberally with lemon herb seasoning, top with onions and or lemons, and cook them up until the pouch swells up, usually only tkaes like 15-20 minutes in the oven or over coals. Sometimes I also add coarse salt for fun. I also do this same seasoning routine and put the fish on the broiler pan in the oven for a few minutes. I loved it when I was younger...I think you will like it too... 1/4 c Fresh Lemon Juice 2 tb Melted Butter Or Margarine 2 tb Vegetable Oil 2 tb Chopped Fresh Parsley 2 tb Sesame Seeds 1 tb Hot Pepper Sauce 1 t Grated Fresh Ginger 1/2 ts Salt 1/2 ts Basil 4 Whole Trout, Cleaned- About 1 Pound Each In a shallow dish, mix the lemon juice, butter, oil, parsley, sesame seeds, Tabasco sauce, ginger, and salt. With a fork, pierce the skin of each fish in several places.... Roll the fish in the lemon juice mixture to coat thoroughly... Leave the fish in the marinade, cover the dish and refrigerate for 30 minutes to 1 hour, turning the fish occasionally... Remove the fish, reserving the marinade, and place them in a hand-held hinged grill. Brush the fish with the marinade... Cook about 4 inches from the hot coals for 5 minutes.. Go to your local grocery store. Buy some Dinosaur Bar-B-Que Cajun Foreplay Spice Rub. You can get this since you are a NYer. This stuff is NOT hot, just tasty. Lightly coat your (stream) trout with oil. Sprinkle the seasoning inside and out and then throw them on the grill till done! A little dill, and lemon juice. Wrap entire fish in foil and put in BBQ or above some coals. Serve with Maple Brown Beans, with a little hot mustard mixed into them. AMAZING!
