sureshot Posted May 30, 2006 Report Share Posted May 30, 2006 Hopefully this will help a few people out, it is rather quite easy if you have a good sharp knife, a sharpener handy and it is much better done with bigger fish[5plus pounds] smaller fish the bones are smaller and it is hard to follow along with the knife without cuttign through them! First off you fillet them just like any fish Then the next thing is getting the skin off, get a sparp knife and start at the tail and push towards the skin,and at the same time pull the tail end away from the knife pushing on the cuttign bourd with the knife, when done there should be a whitish color on the fish side and one piece of skin to discard, may take a few tries but its quite easy once you get the hang of it! Next step is removing the rib cage,all you do here is feel and find the rib cage and with a super sharp knife start at the middle of the fish and follow the bones down to the bottom, the rib cage will pull right out! Next is the hardest part most find, but once you get the idea of how the bones run its no big deal,[you can see them in the pic] There are y-bones in pike and only 1 strip of them, once the ribcage is gone just the y's left, look were you took the ribcage out,feel with your fingers and you will feel a strip of bones right along the center of the fish[they run opposite of the ribcage bones] feel were they go down and with the tip of the super sharp knife follow it along, they will go just about to the top of the fish[opposite of the ribcage] but on a decent size fish just keep feelign along the bones! Once you stop feelign bones with the knife you can stop, Then you go back were you started and you can feel the bottom of the y-bone, it is a bit closer to the ribcage, You will find it if you start to cut right were you started to cut the ribs out!just cut along it on the undersiide of the bones till you feel no more bones! Next thing you do is pull the whole strip of bones out, if you cut a little to far you might have 2 pieces of fish[one smaller from the top of the y's and one bigger were the ribcage was] but this is no big deal,this is what it shoudl look like in 1 piece!The strip of bones is to the side! Then all there is to do is to wash them good and feel them for the odd bone you missed and then cook them up and not worry about bones!! I did 8 fish last night in under 45 minutes so its not a huge process,but well worht it, we deep fry alot with batter, would not be possable with all the bones, I hear so many hate pike couse of the bones, hope this helps a few to enjoy a nice fish and not worry about the bones!! Those Y-bones sure can be bad if they get lodged in your throat, it's best to get them out of there, especially if younger kids are eating them.
