just tried it this past weekend, it was great.

You will need:

Dutch Oven

PAM cooking spray

brown-and-serve sausage links

12 eggs

4-6 potatoes (depending on size)

mushrooms

onion

green and red pepper

milk

shredded cheddar cheese

-spray the bottom and sides of the Dutch over with the PAM. Place sausage links on the bottom (I used a dozen), wash potato skins and then slice them to desired thickness and layer the potatoes over the sausage.

Then scramble 10 eggs with milk or water in a large bowl. Add diced veggies to the eggs, then pour the egg and veggie mixture into the Dutch oven. It should be enough to submerge the sausage and potatoes.

Sprinkle the cheddar cheese over the mixture, cover and cook over fire (a medium distance from coals) for 45-60 mintues. When you can insert and knife into the center and it comes out clean (no wet egg) it is ready to eat (note: you can also remove and let stand for a few minutes to allow the eggs to set up).

This was a delicious breakfast and it will feed 4-6 people.

Quiche?! NO WAY!!!!!!! Around here we call it MOUNTAIN MAN BREAKFAST! wink.gif MMB is a little heavier on the pig, lighter on the eggs and uses hashbrowns, but basically the same.

Got this recipe from LODGE (maker of my camp Dutch oven)- and use it every time we camp.

MOUNTAIN MAN BREAKFAST

Ingredients:

12" Lodge Camp Dutch Oven

24 charcoal briquettes

2 pounds sausage

2 pounds frozen hash brown potatoes

8 eggs, beaten with 1/4 cup water

2 cups grated cheese

Directions:

Fry and crumble the sausage in the Dutch oven over 24 coals. Remove cooked sausage and drain on paper towels. Using the sausage drippings in the pan, brown potatoes and spread them evenly in bottom of Dutch oven. Place cooked sausage over potatoes. Pour eggs over sausage layer. Sprinkle top with cheese. Cook with 8 coals underneath Dutch oven and 16 on top for 20-25 minutes, until eggs are cooked.

Serves 8

P.S> like someone said, any breakfast that has 2 lbs of sausage, 2 lbs of potatos and 8 eggs is MY kind of breakfast! SOmetimes I even share with my family! shocked.gifwink.gifgrin.gif
