Real good marinade for wild game

I like this especially well with Venison......

1/2 cup balsamic vinegar

1/2 cup Dijon mustard

1 1/2 teaspoons ground black pepper

1 1/2 teasppoons salt

3 garlic cloves, minced (or 1 tablespoon minced garlic from a jar--sold in produce section)

1 1/2 teaspoons dried basil

1 1/2 teaspoons dried oregano (sometimes I don't use this--not critical)

Whisk above together.

2 cups olive oil

As you continue whisking, drizzle olive oil into the vinegar mixture in a slow, steady stream. Start slowly, then increase speed very gradually to obtain a smooth emulsion.

Vinaigrette can be refrigerated until ready to use. If dressing separates, or breaks, bring back to room temperature and whisk.
