I discovered a great new recipe last weekend. I took a couple of buddies camping on Lake Dardanelle. I'd planned to do deer steaks with taters and onions wrapped in foil and cooked in the coals, but stupid me, I forgot the foil blush.gif With no foil, the best thing I had to cook the meat in was a 10" cast iron dutch oven. You know what they say...necessity is a mother grin.gif

Anyway, I tossed the taters and onion in with some bacon grease, salt and pepper and cooked until the taters started softening up. Then I threw in the steaks (was actually 1 pack tenderloin steaks and 1 pack cube steaks), and about a cup of D.L. Jardine's Hill Country Mesquite barbeque sauce. I cooked it just long enough for the meat to brown, pulled it off the fire and dished it up. Not only was it super-tasty, it made the best gravy/sauce I've ever had with deer! I'm sure any kinda barebeque sauce or marinade would do equally well, but that DLJ stuff was awesome!

The steaks cooked in foil packs in the coals has always been a camp favorite with my buddies, but I might have to forget the foil on occasion now.

I'm a big fan of easy, low-prep camp food. Anyone else have any camp favorites they'd like to share?

The last few times we have been camping we always cook a pig in the ground.

Take a pork shoulder or butt and season it with your favorite spices, wrap with lots of bacon, place sliced onions on top and wrap THOROUGHLY with several layers of heavy duty foil.

We dig a hole next to our campfire that has been burning all night, put the pig in then cover with coals from the fire. Fill the hole back in with dirt and let that sucker slow cook ALL DAY LONG. About 8-10 hours. Dig it up, Brush off the foil, Then rinse the outer foil. Then unwrap.

Make a puppy pull a freight train!!!! smile.gifsmile.gifsmile.gif

At deer camp we make something called "Boy Scout Stew".I'm not sure where it got it's name from,but it sure is hardy.We put some cajun polish sausage in a dutch oven with some cabbage,carrotts,onions,celery,and potatoes.Dump about two beers in the pot and let it cook on the fire until the veggies are soft.Make sure you have some butter bread to mop up the juice at the bottom of the bowl.

Best camp food.

Pheasant rosted over a beer with Bar B Q sauce on the outside.

After the bird is cooked for a couple hours on low or indirect heat I pull all the meat off the bone and put it in a ductch oven with more Bar B Q sauce.

Serve over Butter tosted Bread.

Also ribs they are the easiest to cook.

Season to taste wrap in foil

Dig a hole put some coals in and cover with 2 inches of Dirt, Place ribs in cover with more dirt and coals on top.

Let it slow cook for 3-4 hours while you take off for your evening hunt. They will be very tasty when you get back.
