Got a lot of tomatoes, jalapenos, and some bell peppers ready from the garden. Bought some onions and garlic from the store. The recipe we used last year was ok, but wanted to look to try something different.

So, anyone got any good recipes for a medium-hot to hot salsa?

Here's one for a great fresh salsa and another for a canned salsa. Heat level is up to you depending on how much you add.

Fresh Salsa

1 medium onion, finely chopped

3-4 large tomatoes, chopped

1-2 green bell peppers, finely chopped

3 Jalapeno peppers, finely chopped

1 tsp garlic salt

1 tsp salt

1 tsp cumin

juice of 1 lime

Mix all ingredients in a bowl and stir in juice of lime. Adjust seasonings to taste.

Canned Salsa

20 cups vine ripened home grown tomatoes -- skinned, chopped

10 cups chopped onions

10 Habanero's - (to 40)

8 sweet banana peppers -- chopped, seeded

8 jalapeo peppers -- chopped

5 garlic cloves -- minced

2 green bell peppers -- seeded, chopped

1 red bell pepper -- seeded, chopped

2 1/2 cups white vinegar

4 tablespoons chili powder

5 teaspoons salt

3 teaspoons cayenne pepper

Squeeze juice out of tomatoes before chopping.

Cook all ingredients for several hours to cook down to a thicker consistency. Stir often.

Heat jars and lids. Pour salsa into jars and wipe top of jars clean before putting on flats and rings.

Tighten down ring and set on towel to cool. Do not disturb for 24 hours.

If it did not seal, place in refrigerator. It can be reheated to try again.

Heres on I like to use

2 1/2 pounds vine-ripened tomatoes

4 garlic cloves

2 jalapeno peppers

1/2 red bell pepper

1/2 green bell pepper

Olive oil

1 cup finely diced sweet onion

1/4 cup chopped fresh cilantro

1 teaspoon minced chipotle in adobo, or more to taste ( Opt ) For a smoky flavor

3 tablespoons fresh lime juice

salt

Prepare fire for the grill.

Slice tomatoes in half.. Peel and skewer the garlic. Brush the tomatoes, garlic, chiles, and bell peppers with olive oil. Grill the vegetables, turning occasionally, until tender and slightly charred, 5 to 10 minutes... Remove the vegetables as they are done. Place the chiles and bell peppers in a paper bag to steam for 10 minutes to loosen the skins...

Peel the chiles, tomatoes, and bell peppers if you wish.. Finely chop the vegetables. Combine in a bowl and stir in the onion, cilantro, chipotles, lime juice, and salt to taste..

To Can you need to increase equal parts lemon juice and vinegar..
