oldksnarc Posted August 18, 2006 Report Share Posted August 18, 2006 Re: Venison Chili Recipes 2 lb. ground Venison (can substitute 1lb ground beef and 1 lb pork sausage if you have to) 1 can (12 oz) beer 1/2 lb. fresh mushrooms, 1/2 chopped - 1/2 sliced 1-2 fresh jalapenos, de-veined, de-seeded and finely chopped (Sautéed, cooked jalapenos do not add that much spice-heat to chili so don’t be afraid to add the jalapenos) 2 tsp. chili powder (more to taste) 1 tbs. oregano 2 tbs. cumin 1 can (15.5 oz.) tomato sauce 1 can (15.5 oz) diced tomatoes with green chilis 3 tbsp. barbecue sauce 1 large onion, chopped 3 clove garlic, minced 1/2 cup water 1 can (15.5 oz) Pinto Beans, drained 1 can (15.5 oz) Great Northern Beans, drained (or any beans of choice) In a skillet with melted butter, sauté onions, garlic and jalapenos, adding mushrooms about half-way through. At same time, in a large pot, brown meat and then drain and rinse (if using beef/pork mixture). Return to pot and add beer and stir. Add sautéed onions, garlic, jalapenos and mushrooms, along with chili powder to pot, cover and simmer for 20 minutes to allow the flavors to blend. Add the rest of the ingredients to the pot and continue to simmer for 1 hour stirring occasionally. If it is too thick, add more beer to get desired consistency. Drain beans and add to pot. One thing I do consistently with venison in chili is to saute my onions and a mix of bell peppers and jalapenos, then add my ground venison into the olive oil and vegetables and cook at a low heat until the meat is browned well.
