I normally cut off the meat and throw it into the grinder to make hamburger like many others have said.. But sometimes i dont evan bother. I am going to saw the ribs off with the back straps still attached and make a rack of deer smoked out on the Weber. I'll leave about 3 inches of rib on one end and as little as possible on the other.
