What I have done though (with some ducks, and even a snow goose once) slice the breast meat into medallions, marinate them in a ziplock bag with olive oil and Montreal Steak Seasoning for a few hours (I prefer to marinate longer - say overnight) and then sear them on a hot grill. rbduck Posted December 9, 2004 Report Share Posted December 9, 2004 Re: Goose recipes Cut the breast meat into thin strips(crossways) and thread them onto bamboo skewers which have been soaked in water for half hour. If you want, you can cut the breast meat in half first so that they are not too thick, plus you get more meat on the skewers. Grill on BBQ about 5 to 7 minutes turning constantly. Guest IADEERDUDE Posted December 9, 2004 Report Share Posted December 9, 2004 Re: Goose recipes best ive found..cut goose breasts into cubes marinate in teryaki over night wrap a piece of bacon around them and put on skewers grill over medium heat until done. you will not belive how good this is better than steak.
