Read that maple yields a good flavor for poultry and was thinking about using maple to smoke a couple turkeys. [/ QUOTE ] Yep. Red maple will give you the same basic result if that's what you have to use. Red maple's sugar content is somewhat lower than sugar maple's. But it's still considerable.
